TASTING NOTE
This take on Italy's traditional nutty liqueur stands out for its natural flavor profile, with bright citrus orchard notes complementing its earthy, savory core, and overall balanced complexity. It's complex and not cloyingly sweet, with flashes of citrus that illuminate its earthy character and a savory finish that lingers.

A seasonal favorite. The green (young) nuts are hand-picked by our friends at Foraged and Found and delivered to us overnight.
We cut each nut in half and macerate them with eight other ingredients, including citrus peel, allspice, vanilla, and cocoa beans, for three weeks in neutral, non-GMO grain liquor. We then strain and adjust to 40% ALC and age in barrels for 10 months to a year. During this time, the flavors mellow and concentrate to reveal a very nuanced and balanced tincture. We filter it from the barrels, clarify it and sweeten it with organic cane sugar. It is bottled at 22% alcohol content by volume (abv) and we produce around 80 cases a year.
This interpretation of the classic nocino has less spice, is more complete and less cloyingly sweet. Imagine if maple syrup and vanilla extract had a baby...that's ours nocino.
