

TASTING
Reddish color, with violet tones, high layer and very intense on the nose, where the well-integrated wood dominates - denoting its high quality -, dairy, clove and vanilla.
Fruity sensations dominate, with memories of red fruits and small, well-ripened wild fruits (blackberry, currant, wild strawberries) and floral notes (violet petals). Spicy touches of aging: cinnamon and black pepper. With very well integrated wood that denotes a high quality of its selection.
In the mouth we find a wine with a very good structure and acidity, fresh and with a present and round tannin. The finish in the mouth is very long. It has aging potential and a persistent, broad and elegant aftertaste.

Clay-calcareous and alluvial.
ELABORATION
Fermentation always occurs naturally and spontaneously. The grapes will always ferment in wooden tanks, of small capacity, without temperature control with indigenous yeasts. Maceration is variable but can last up to two or three weeks. Aging for 18 months in new French oak barrels. After aging, a slight clarification is carried out with fresh egg white.
