TASTING NOTES
Bright in color with bright yellow and silver tones. Marked notes of citrus fruits and fresh herbs. In the mouth, marked acidity, very fresh and mineral.
PAIRING
It combines perfectly with aromatic and spicy foods such as Thai food, as well as with seafood such as oysters and fresh white fish. It complements well with many appetizers and first courses: dried fruits, fresh cheeses with olive oil and fresh herbs.

Origin: Sauvignon Blanc, a grape of great personality, is fully expressed in selected areas such as the Loire in France, New Zealand, Friuli in Italy and, more recently, Chile, and in particular in the coastal area of Leyda. Its name is inspired by the wonderful sunrises that emerge from its vineyards, Albaclara is a pure Sauvignon Blanc, its grapes are harvested by hand in the Leyda vineyards.
Climate: The Leyda Valley, specifically in the town of Las Brisas de Santo Domingo, where the Albaclara Sauvignon Blanc vineyards are located, the budding and flowering times occurred at normal average temperatures. During the ripening period, average maximum temperatures were lower than usual, with cloudy days and low thermal oscillation predominating. This gave the wines a marked fresh note with citrus and herbal characters. After careful selection, the grapes were harvested during the month of April.
Vinification: The grapes arrived at the winery and were then destemmed and gently pressed. Fermentation was carried out at low temperatures in stainless steel vats for 12 to 15 days, in order to enhance the freshness of the grapes. Once the fermentation was finished, the wine was left on its fine lees, lightly basting once every two weeks, before being bottled in July 2021.
