Catena Zapata - Adrianna Mundus Bacillus Malbec 2011 750 ml - Vino Tinto
The Catena family begins its second century as a wine producer in Mendoza, Argentina. The Adrianna vineyard, located at an altitude of almost 1,500 meters above sea level, is named after the youngest daughter of Nicolás Catena Zapata. The soils of this plot are composed of calcium carbonate and marine fossils that covered the region millions of years ago. The calcareous layers provide good drainage and are rich in rhizobacteria, the microorganisms that help the vine root to withstand stress and absorb nutrients. Hence, the term “mundus bacillus terrae” or “elegant microbes of the earth”.

TECHNICAL INFORMATION
Fermentation: In 225-litre oak barrels and in 500-litre French oak roll-fermentors for 16 days.
Max. Temp. Fermentation: 25/30ºC. 8-13 days of maceration.
Aging: 24 months in French oak foudres of 2000 liters.
Varietal: 100% Malbec
Alcohol: 14.50%
Total Acidity: 7.3 grams/liter
pH: 3.55
Main Descriptors: Abundant tannins and great aging potential.
