TASTING NOTES:
Expressive. It fuses red and black fruits, mainly ripe and intertwined with notes of cedar, tobacco and a mineral background.
Opulent, massive and expressive, with a long, fresh (balsamic notes) and elegant finish. It highlights a certain “calcium” character that gives it minerality.
PAIRING: Red meats, oxtail, lamb, suckling pig, game and mature cheeses.

Winemaker Xavier Ausàs has a great CV in his professional career, among which 25 years in the mystical Vega Sicilia winery stand out.
In 2015 (first harvest) he ventured into this personal project.
It is the result of his personal interpretation of the Ribera del Duero; its climate, soils and vineyards, to the point that he carries out parcel vinifications to respect the effect of each of the lands, cold macerations for fruit extraction and different fermentation temperatures to try to respect the uniqueness of each origin.
Limited production of 35,000 bottles.
