ELABORATION
Manual harvest. After a light maceration of the skins with the must in the press, it is fermented in wooden vats of different volumes and new French oak barrels from the Nevers district with a very light toast. Once the alcoholic fermentation is finished, it remains in the barrels for 4 months, making 2 battonagges per week during the first months and one daily in the last month, to keep its fine lees in contact with the wine, protecting it from oxygen and providing softness in the mouth and complexity.
