An exciting and unique wine, bottled in 2014 after more than 20 years of aging in American oak barrels and almost 6 years of resting in concrete tanks.
Incredibly complex and vibrant, it will continue to evolve in the bottle for many years to come.
Pairing: Woodcock roasted over charcoal from Garnacha vines with black truffle, foie gras, and aged brandy. Steamed spider crab meat with fresh handmade pasta. Stuffed and caramelized Iberian pig's trotters with oyster mushrooms and white truffle. Steamed hake cheeks with pil-pil sauce, and acorn-fed Iberian ham ravioli.
