Unlike almost all other houses that blend grapes from different villages, Salon uses 100% Chardonnay from a single location: the Grand Cru of Le Mesnil-sur-Oger. Its pure chalk soil imparts extreme acidity and minerality. It is the pioneer of the Blanc de Blancs concept. There is no Pinot Noir or Meunier; only the purity of the finest Chardonnay. Salon does not produce a basic wine (NV). It only releases bottles from exceptional vintages. Throughout the entire 20th century, only 37 vintages were released. If the year is not perfect, the grapes are used for the champagnes of its "sister" house, Delamotte.
While a typical champagne is released after 15 months and a Delamotte after 4-5 years, Salon rests in the cellars for an average of 10 to 15 years before being released. This transforms its electric acidity into a silky complexity of brioche, hazelnuts, and dried flowers.
