Ageing: Fermentation in barrel, average temperature: 22ºC. Cold maceration for 5 days. Average maceration 23 days. French oak barrels 2nd and 3rd use. 4 different harvest times (1.5 months between the first and the last).

El Gran Enemigo Gualtallary Single is mainly Cabernet Franc with Malbec from granite and calcareous soils. It is produced using the loco Vigil method from seven different vintages to achieve different levels of maturity and different character from the small parcels which he believes adds to the complexity of the wine.

TASTING NOTES
It is the expression of elegance and austerity, together with a strong minerality and great refinement of the tannins. His nose of thyme and chalk is completely austere. It has a citric, sharp, thick palate.
